Whole cell, autolysed or cell wall

All of it starts as Saccharomyces cerevisiae — brewers’ yeast — and the processing decides the product: dried whole cells keep the B-vitamin and protein profile, autolysis breaks the cell down for extracts and nucleotide-rich fractions, and the cell wall is where the beta-glucans sit.
